Heat the oil in a saucepan then add red onion and dried shrimp, stirring occasionally. Add the water or any broth you have and the white part of the watermelon, flavor with salt and pepper and decorate with coriander which I plant at my small balcony.

The light combination between salt and the gentle sweetness from watermelon makes my day.

You shouldn’t overcook the watermelon otherwise it would lose its crispness.
